Carrot-Kale Salad

The applesauce in this fast makeahead salad perfectly blances the zip of the vinaigrette.

1 Tbsp honey

1 Tbsp dijon mustard

3 Tbsp olive oil

1 Tbsp apple cider vinegar

½ cup unsweetened applesauce

¼ tsp salt

⅛ tsp pepper

6 cups chopped kale

2 carrots, peeled and shredded In a large bowl, whisk together honey, mustard, olive oil, vinegar, applesauce, salt and pepper. Add kale and carrots to bowl; toss until well-coated in dressing mixture. Refrigerate at least 30 minutes, until kale softens. Serves 6
