Speedy Pasta Skillet
Fresh, fast Italian flavors—what could be better?
Skillet Tortellini with Sausage and Tomatoes
1 Tbsp oil
1 lb Italian sausage
2 garlic cloves, sliced thin
4 cups reduced-sodium chicken broth
12 oz dried cheese tortellini
6 oz cherry tomatoes, halved
2 Tbsp chopped basil Grated Parmesan cheese
1. Heat oil in a large nonstick skillet over medium until shimmering. Add sausage and cook, breaking meat into small pieces with a spoon, until no longer pink, about 4 minutes.
2. Add garlic and cook until fragrant, about 30 seconds. Add broth and pasta and bring to a boil. Cook, stirring occasionally, until pasta is tender, about 15 minutes.
3. Stir in tomatoes and cook about 2 minutes, until slightly softened. Sprinkle with basil and Parmesan cheese. Serves 6
